Tasting Notes

A superb wine with deep rich colour and flavour. In Paracombe Wines’ hallmark style the wine is highly aromatic, providing lifted aromas of dark cherry, cassis and blackberry. The palate is a delightful mix of sweet and spice, generous fruit and a long, layered finish.
The Cabernet Sauvignon gives the wine elegant fruit, structure and definition, whilst the Merlot grants balance of softness, a great marriage of complimentary grape varieties. Enjoy this wine with many styles of fine food.

An elegant Cru Bourgeois style with a classically gravelly texture and a pristine, complex perfume of ripe black and red berries, fresh cedar/vanilla oak and slatey, dried herbal undertones. Medium to full-bodied, it’s long and brightly lit, with a vibrant core of fruit that extends long and shapely towards a persistent and finely balanced finish. Excellent value. Jeremy Oliver

Vineyard & Site Climate: Harvested from select Adelaide Hills growers, various soil types and aspects with cool climate elegance running true.
Vinification: Crushed, destemmed and fermented at cool temperatures to gain gentle extractions of colour and flavour. The wine was carefully air cushion pressed, settled and transferred to French Oak for 20 months maturation Barriques & Hogsheads.
Alc: 14.2%
Production: 1168 cases (12 x 750mL)
